Gazpacho is a traditional cold Spanish soup typically served in the summer, and my mom is from Spain so I am so thankful that she taught me how to make this and taught me to love it (although it's really hard not to fall in love with it!) So I dedicate this recipe to my mom, who has taught me so much about cooking and always was patient with me in the kitchen while I was learning. It is such a simple dish, but so tasty and refreshing, especially during the summer when tomato season is in! This recipe is so easy, you can probably make it in under 5 minutes, I dare you!
This recipe is refreshing, bursting with flavor, and makes you feel good inside and outside too! Eat this healthy, gazpacho recipe and give your immune system a high-five and just wait for your skin to sing you praises!
Traditional gazpacho typically has a good amount of olive oil, and some even has bread, which makes it a bit heavier. I opted to add a small piece of ripe avocado instead to give it that same creaminess without all of the added fat. The ingredients will speak for themselves, and there are so few of them so you will get all of the flavors packed into a bowl of spectacular Spanish soup. I love adding the guarnición (or toppings) to give it a little crunch. The soup is so silky smooth, and the finely chopped cucumber, tomatoes, peppers, and onion give it that extra crunch. ¡Olé!

For the Gazpacho:
2 large, ripe tomatoes2 small cucumbers, peeled
1/4 red bell pepper
1/4 ripe avocado, peeled
2 T sweet vidalia onion (optional)
1 clove garlic (optional)
For the Guarnición (topping):
1 small cucumber, peeled and cubed
1 tomato, chopped into small pieces
1/4 red or yellow bell pepper, cubed
1 T vidalia onion (optional)
Instructions:
1) Place all of your ingredients for the gazpacho in a high-powered blender or food processor and blend until completely smooth. If it comes out chunky, use a hand-blender to further process.
2) Once the soup is completely smooth, place it in the fridge for about 1 hour until it is chilled and then top with desired guarnición (toppings). You can also serve it at room temperature if the thought of waiting an hour is just unbearable! :) Enjoy!
