Welcome to Plant-Based Carolina!
I was born in Florida to a Spanish mother and Cuban father, and I was speaking both Spanish and English by the time I was three.
At age 7, my parents signed up my sister and me for a summer tennis camp. I didn't think much about sports, but then my older sister started getting more into tennis and I decided I'd give it a shot. After my first lesson, I was hooked! Pretty soon, I outgrew my 1-hour lesson and wanted more training. I met some of my best friends playing tennis, and I met someone else very special... (read on!)
When I was a freshman in college, I read a book that changed how I thought about food and it opened a Pandora's box; I was watching food documentaries, reading all the food books I could, and applied for internships that allowed me to engage in food politics and healthy eating. I embarked on a journey to a 100% plant-based vegan lifestyle; that means no animal products and eating whole foods that have not been minimally processed or refined (fruits, vegetables, nuts, seeds, grains, legumes). There are infinite plant-based dishes, some that I discovered throughout my college years while cooking different creations for my friends and family and writing a cookbook. People asked me how I had time to cook, play tennis 3 hours a day, and keep up my grades, and the answer is because all three of those things are priorities to me.
Immediately after adopting a plant-based diet, I started seeing significant changes in my game; my energy levels boomed, I started outrunning all of my teammates, and my recovery times were supersonic speed! I remember playing a tournament in college where I played 9 hours of tennis in one day, and the next day we had to get up and play again, and I felt so fresh and strong, and it was the best feeling in the world that I was now in control of my body and how I felt! All of my acne went away, my skin glowed, and I feel so happy to have learned about this lifestyle at an early age.
Pretty soon, I was searching for post-graduate programs that allowed me to pursue this passion even further. I was accepted into New York University's Food Studies Masters program, and I was SO excited! Moving to the Big Apple to study what I loved, I didn't think life could get better.
But then I re-encountered my soulmate, who I had met when we were 17 at a tennis academy in Spain, and it was like time had never passed. Now, we are married and taking on the world together!
